Clean Green Chicken Wraps [recipe]

I’m super excited to share this one! These are 3 recipes that have been on my mind for a while. I’ve perfected them and they go deliciously together. Think fresher, cleaner, greener KFC Twisters that are completely unprocessed, full of nutrients and completely empty of any crap. And you get Clean Green Chicken Wraps!


The wraps are completely versatile and have no overpowering flavours so you can get creative with fillings. I used the homemade tangy keto mayo, added some baby spinach leaves and the chicken. You can also fill it with roast veggies, salad and your favourite clean protein.


I’ve been wanting to make my own mayo for a while now because I can’t find any clean products in the grocery stores that actually taste good! I was shocked at how easy it was to get this right at home. If you’re not interested in making it, use whatever condiment you prefer.


Tzatziki would work well too. I’m just off dairy at the moment. This is a long one because it contains all 3 recipes I used to make the meal. If it intimidates you, just use plain grilled chicken. That’s the longest part of the meal prep (and it doesn’t even take that long).


Low Carb Chicken Tenders


Prep Time 20 minutes

Cooking Time 12 minutes


INGREDIENTS

Marinade

  • 1 handful fresh parsley

  • 1 teaspoon chopped garlic (optional)

  • 1 large egg free range

  • 1 tablespoon lemon juice

  • salt to taste

  • cayenne pepper to taste

  • 500 grams mini chicken breast fillets (free range

Crust

  • 1 cup almond flour

  • 3 tablespoons sesame seeds (optional)


INSTRUCTIONS

Marinade

  1. Add all ingredients except the chicken into a large enough storage container (with lid) to hold everything

  2. Mix everything together roughly

  3. Add chicken pieces and mix around to coat them in the marinade

  4. Put the lid on and leave in the fridge for an hour (shake it around in between if your remember)


Chicken Crust

  1. Preheat oven to 190ºC (375ºF)Take the chicken out of the fridge and remove the lid. Pour almond flour and sesame seeds onto a large plate.

  2. Using a fork, take one piece of chicken at a time and roll it around in the flour mixture to coat it all over.

  3. Spray an oven tray with olive oil and add coated chicken strips to the tray.

  4. Bake for 12-15 minutes, until just cooked through and the coating has browed

  5. Serve with a dip of your choice, in a wrap or with your favourite side dish.


Tangy Keto Mayo


Prep Time 5 minutes


INGREDIENTS

  • 1 large egg free range

  • 1 cup avocado oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon lemon juice

  • 1 tablespoon dijon mustard

  • salt to taste


INSTRUCTIONS

  1. Break egg into a tall beaker

  2. Add all the rest of the ingredients to the beaker

  3. Place immersion blender firmly at the bottom of the beaker

  4. Blend on high without moving the blender

  5. Once the mixture thickens and the lighter sauce rises into the oil, lift the blender to combine all ingredients thoroughly

  6. Taste and adjust to your preference (I like it extra tangy so I use extra ACV)

  7. Store in an sealed glass container in the fridge for 2-4 weeks (depending on how much vinegar and salt you used)


Clean Green Wraps

Prep Time 5 minutes

Cook Time 4 minutes each


INGREDIENTS

1 large egg free range

1/2 cup tapioca flour

1 cup almond flour

1 handful baby spinach

1 cup water

1/3 teaspoon salt

olive or avocado oil to pan fry


INSTRUCTIONS

  1. Add all ingredients to a blender and blend until completely smooth

  2. The consistency should be liquid but thicker than water. Add a little more water if it's too thick.

  3. Heat up a dot of oil in a large non-stick pan. Spread it all over and get the pan hot.

  4. Pour mixture into the heated pan. Fill about half the pan with mixture and then lift the pan and spread it to cover the entire surface before it cooks through.

  5. Flip after 2 minutes and cook the other side for 1-2 minutes before removing from the pan.

  6. Continue with the mixture until it is finished.

  7. Get creative and fill with your favourite ingredients! Can be stored, covered in the fridge for a few days.
