Eggplant Pizza Rolls | Carb-Free Treat [recipe]

Craving pizza but don’t want to ruin your diet? These Eggplant Pizza Rolls will satisfy your cravings without compromising your low-carb diet plan.

Eggplant is a vegetable with one of the lowest carbohydrate contents, that is safe to have as much as you like of.

Feel free to experiment with different fillings of your choice. The chicken gives a nice balanced meal, but you can try different cheeses or mushrooms and spinach for other tastes.

Eggplant Pizza Rolls

Prep Time 20 minutes

Cook Time 50 minutes


Chicken Filling

  • 1 cup mini rosa tomatoes organic

  • 2 handfuls basil leaves fresh

  • 1/2 teaspoon garlic flakes dried

  • 2 tablespoon tomato paste organic

  • 2 tablespoon BBQ sauce sugar-free

  • 400 grams mini chicken breast fillets free range

Eggplant Pizza Rolls

  • 1 large eggplant

  • salt

  • olive oil extra virgin

  • 1/2 cup white cheddar grated

  • 1/2 cup mozzarella grated


Chicken Filling

  1. Blend tomatoes with 1 handful of basil leaves until smooth

  2. Add to a pan with garlic, tomato paste and BBQ sauce. Season to taste.

  3. Simmer for 3 minutes

  4. Reduce heat and add mini chicken fillets to the sauce, flipping them every 2 minutes

  5. Shake off the excess sauce and set chicken fillets and extra sauce aside separately.

Eggplant Pizza Rolls

  1. Slice the large eggplant lengthwise, about 1/4 inch each. You should get 8-10 slices from the eggplant.

  2. Cover the eggplant slices in salt on both sides.Set the eggplant slices aside in a colander for 30-45 minutes.

  3. Preheat oven to 420ºF (220ºC)

  4. After 30-45 minutes the eggplant will have sweated out the excess moisture.

  5. Place each eggplant slice between paper towels to absorb the droplets and wipe off the excess salt.

  6. Baste both sides of the eggplant slices in olive oil and place on foil-covered baking trays.

  7. Bake for 20 minutes, turning the slices halfway. They should be soft with some crispy edges.

  8. Remove the eggplant from the tray and set aside to cool for 5 minutes.

  9. Spread a thin layer of pizza sauce on the bottom of an oven dish.

  10. Construct pizza rolls by placing a chicken fillet on the edge of the eggplant slice and roll the eggplant around the chicken.

  11. Roll each piece of eggplant around the chicken fillets.

  12. Place the pizza rolls in the oven dish.

  13. Spread the rest of the pizza sauce over the top of the eggplant rolls.

  14. Cover the rolls with all of the grated cheese

  15. Bake for 20 minutes, until the cheese melts and goes a little brown on top.

  16. Serve the eggplant rolls hot, with the the rest of the basil leaves chopped up over them as garnish


If you don't feel like making the pizza sauce from scratch you can buy a sugar free ready-made sauce and cook the chicken in that sauce to save a step.

You can get creative with different fillings if you want something more interesting.
